Ingredients
  

Scallops
  • 1 pound large sea scallops patted dry
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste
Cilantro Lime Sauce
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Whisk together cilantro, lime juice, olive oil, garlic, and red pepper flakes (if using). Season with salt and pepper. Set aside.
  2. Season scallops with salt and pepper.
  3. Heat olive oil and butter in a skillet over medium-high heat until shimmering.
  4. Add scallops to the skillet in a single layer. Sear for 2-3 minutes per side, until golden brown and cooked through.
  5. Remove scallops from skillet and place on a serving plate.
  6. Spoon cilantro lime sauce over the seared scallops and serve immediately.

Notes

For best results, ensure scallops are very dry before searing to achieve a beautiful golden-brown crust.
