- Whisk together cilantro, lime juice, olive oil, garlic, and red pepper flakes (if using). Season with salt and pepper. Set aside.
- Season scallops with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat until shimmering.
- Add scallops to the skillet in a single layer. Sear for 2-3 minutes per side, until golden brown and cooked through.
- Remove scallops from skillet and place on a serving plate.
- Spoon cilantro lime sauce over the seared scallops and serve immediately.
Notes
For best results, ensure scallops are very dry before searing to achieve a beautiful golden-brown crust.
