Method
- Season scallops with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear scallops for 2-3 minutes per side, until golden brown. Remove and set aside.
- In the same skillet, add chicken broth, heavy cream, and Cajun seasoning. Bring to a simmer.
- Reduce heat to low and simmer for 5 minutes, or until sauce has thickened slightly.
- Stir in lemon juice and green onions.
- Return scallops to the skillet and toss to coat with the sauce.
- Serve immediately.
Notes
Be careful not to overcook the scallops, as they can become tough. Patting them dry before searing helps them to brown nicely.
