Seared Scallops With Spicy Cajun Cream Sauce

Ingredients
  

Scallops
  • 1 pound large sea scallops patted dry
Sauce
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon chopped green onions
  • 1 teaspoon lemon juice

Method
 

  1. Season scallops with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear scallops for 2-3 minutes per side, until golden brown. Remove and set aside.
  4. In the same skillet, add chicken broth, heavy cream, and Cajun seasoning. Bring to a simmer.
  5. Reduce heat to low and simmer for 5 minutes, or until sauce has thickened slightly.
  6. Stir in lemon juice and green onions.
  7. Return scallops to the skillet and toss to coat with the sauce.
  8. Serve immediately.

Notes

Be careful not to overcook the scallops, as they can become tough. Patting them dry before searing helps them to brown nicely.
