  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 lb ground lamb or beef
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup frozen peas
  • 1 cup frozen corn
  • Salt and pepper to taste
Topping
  • 2 cups mashed potatoes (prepared)
  • 1/4 cup shredded cheddar cheese (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add ground lamb or beef and cook, breaking it up with a spoon, until browned.
  3. Stir in thyme and rosemary and cook for 1 minute more.
  4. Pour in beef broth and diced tomatoes. Bring to a simmer.
  5. Reduce heat and simmer for 15 minutes, allowing flavors to meld.
  6. Stir in frozen peas and corn. Cook until heated through, about 5 minutes.
  7. Season with salt and pepper to taste.
  8. Ladle soup into bowls and top with a spoonful of mashed potatoes and cheddar cheese (if using).
  9. Serve immediately.

Notes

For a richer flavor, use homemade beef broth. You can also add other vegetables like potatoes or green beans.
