Ingredients
  

Meat
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 cup uncooked rice
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste Salt and pepper Salt and pepper
  • optional for garnish Fresh parsley

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook ground beef until browned; drain excess fat.
  3. Add onion and garlic; cook until translucent. Stir in tomatoes, rice, broth, beans, corn, spices, salt, and pepper.
  4. Bring to a boil, then simmer for 5 minutes. Transfer to a greased casserole dish.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake 10-15 minutes more. Garnish with parsley if desired.
