Ingredients
  

Main ingredients
  • 1 cup cooked brown rice
  • 2 cups cooked, shredded chicken breast
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 cup whole wheat breadcrumbs (optional for topping)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, chicken, broccoli, broth, yogurt, garlic, onion, salt, and pepper in a bowl.
  3. Transfer to a greased 9x13 inch dish, top with cheese, and optional breadcrumbs.
  4. Cover with foil and bake for 25 minutes, then uncover and bake 10-15 minutes until bubbly and golden.
  5. Let cool briefly before serving.

Notes

For extra flavor, add herbs or spices as desired.
