  • 1.5 lbs ground beef
Other
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 lbs potatoes, peeled and cubed
  • 0.5 cup milk or beef broth
  • 0.5 cup sour cream
  • 1 tsp dried thyme
  • 0.5 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • Optional: chopped fresh parsley or green onions for garnish

Method
 

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add beef, salt, and pepper. Cook until browned, then drain grease.
  3. Add onion and garlic; cook 2-3 minutes until softened.
  4. Spray slow cooker with cooking spray.
  5. Place beef mixture in the slow cooker.
  6. Combine potatoes, milk/broth, sour cream, thyme, and garlic powder in a bowl. Mix well.
  7. Pour potato mixture over beef in the slow cooker.
  8. Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
  9. Sprinkle cheese over the casserole during the last 30 minutes.
  10. Cover and cook until cheese is melted.
  11. Carefully remove the lid.
  12. Garnish with parsley or green onions, if desired.
  13. Serve hot and enjoy!

Notes

For a richer flavor, use beef broth instead of milk. You can also add other vegetables like carrots or celery.
