- Heat olive oil in a skillet over medium-high heat.
- Add beef, salt, and pepper. Cook until browned, then drain grease.
- Add onion and garlic; cook 2-3 minutes until softened.
- Spray slow cooker with cooking spray.
- Place beef mixture in the slow cooker.
- Combine potatoes, milk/broth, sour cream, thyme, and garlic powder in a bowl. Mix well.
- Pour potato mixture over beef in the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
- Sprinkle cheese over the casserole during the last 30 minutes.
- Cover and cook until cheese is melted.
- Carefully remove the lid.
- Garnish with parsley or green onions, if desired.
- Serve hot and enjoy!
Notes
For a richer flavor, use beef broth instead of milk. You can also add other vegetables like carrots or celery.
