  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 15 ounce can corn, drained
  • 15 ounce can black beans, rinsed and drained
  • 10 ounce can diced tomatoes and green chilies (like Rotel), undrained
  • 1 ounce packet taco seasoning
  • 10.75 ounce can condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Tater tots

Method
 

  1. Brown ground beef in a skillet, drain grease.
  2. Combine beef, onion, pepper, corn, beans, tomatoes, and taco seasoning in a slow cooker.
  3. Stir in cream of mushroom soup.
  4. Top with tater tots.
  5. Cook on low for 6-8 hours or high for 3-4 hours, until tater tots are tender.
  6. Sprinkle with cheese during the last 30 minutes, until melted.
  7. Serve hot.

Notes

For a spicier kick, use hot taco seasoning or add a pinch of cayenne pepper.
