Method
- Place red onion, red and yellow bell peppers in the slow cooker.
- Place chicken thighs on top of the vegetables.
- Combine tomatoes, olives, olive oil, lemon juice, garlic, oregano, basil, salt, and pepper in a bowl.
- Pour the tomato mixture over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
- Shred the chicken with two forks in the slow cooker.
- Serve over rice, quinoa, or couscous. Garnish with feta and parsley, if desired.
Notes
For a richer flavor, brown the chicken thighs in a skillet before adding them to the slow cooker.
