  • 2 lbs boneless, skinless chicken thighs
  • 1 red onion sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 14.5 oz canned diced tomatoes undrained
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup olive oil
  • 0.25 cup lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • crumbled feta cheese Optional: for garnish
  • fresh parsley Optional: for garnish

Method
 

  1. Place red onion, red and yellow bell peppers in the slow cooker.
  2. Place chicken thighs on top of the vegetables.
  3. Combine tomatoes, olives, olive oil, lemon juice, garlic, oregano, basil, salt, and pepper in a bowl.
  4. Pour the tomato mixture over the chicken.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked.
  6. Shred the chicken with two forks in the slow cooker.
  7. Serve over rice, quinoa, or couscous. Garnish with feta and parsley, if desired.

Notes

For a richer flavor, brown the chicken thighs in a skillet before adding them to the slow cooker.
