Method
- Season chicken with salt, pepper, garlic powder, and onion powder.
- Sear chicken in olive oil until browned, then transfer to slow cooker (optional).
- Mix rice, chicken broth, lemon juice, thyme, and oregano in a bowl.
- Pour rice mixture over chicken in the slow cooker.
- Place lemon slices on top of the rice.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- Check chicken for doneness (165°F) about 30 minutes before serving.
- Remove chicken, fluff rice, and stir in additional seasonings if desired.
- Shred chicken or serve whole over rice, garnished with parsley.
Notes
For extra flavor, add a bay leaf to the slow cooker while cooking.
