  • 4 boneless, skinless chicken breasts
  • 1.5 cups long-grain white rice
  • 2 cups chicken broth
  • 1 cup lemon juice (freshly squeezed)
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 lemon sliced (for garnish)
  • Fresh parsley chopped (for garnish)

Method
 

  1. Season chicken with salt, pepper, garlic powder, and onion powder.
  2. Sear chicken in olive oil until browned, then transfer to slow cooker (optional).
  3. Mix rice, chicken broth, lemon juice, thyme, and oregano in a bowl.
  4. Pour rice mixture over chicken in the slow cooker.
  5. Place lemon slices on top of the rice.
  6. Cook on low for 6-7 hours or on high for 3-4 hours.
  7. Check chicken for doneness (165°F) about 30 minutes before serving.
  8. Remove chicken, fluff rice, and stir in additional seasonings if desired.
  9. Shred chicken or serve whole over rice, garnished with parsley.

Notes

For extra flavor, add a bay leaf to the slow cooker while cooking.
