  • 1.5 lbs boneless, skinless chicken thighs
  • 14.5 oz canned diced tomatoes undrained
  • 0.5 cup Kalamata olives pitted and halved
  • 0.5 cup artichoke hearts quartered
  • 0.25 cup sun-dried tomatoes oil-packed, drained and chopped
  • 2 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon red pepper flakes optional
  • to taste Salt and pepper
  • Feta cheese crumbled (for serving)
  • Fresh parsley chopped (for serving)

Method
 

  1. Place chicken thighs in the slow cooker.
  2. Combine tomatoes, olives, artichoke hearts, sun-dried tomatoes, garlic, oregano, basil, and red pepper flakes (if using) in a bowl.
  3. Pour the tomato mixture over the chicken thighs.
  4. Season with salt and pepper to taste.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
  6. Shred the chicken with two forks.
  7. Serve over rice, couscous, or pasta. Garnish with feta cheese and fresh parsley.

Notes

For a richer flavor, brown the chicken thighs in a skillet before adding them to the slow cooker.
