- Place chicken thighs in the slow cooker.
- Combine tomatoes, olives, artichoke hearts, sun-dried tomatoes, garlic, oregano, basil, and red pepper flakes (if using) in a bowl.
- Pour the tomato mixture over the chicken thighs.
- Season with salt and pepper to taste.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
- Shred the chicken with two forks.
- Serve over rice, couscous, or pasta. Garnish with feta cheese and fresh parsley.
Notes
For a richer flavor, brown the chicken thighs in a skillet before adding them to the slow cooker.
