  • 1.5 lbs ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes with green chiles
  • 8 corn tortillas, cut into strips
  • 2 cups shredded Mexican cheese blend
  • 10 oz enchilada sauce
  • 0.5 cup diced onions
  • Fresh cilantro, for garnish

Method
 

  1. Brown ground beef with onions; drain excess fat.
  2. Stir in taco seasoning, beans, corn, and tomatoes.
  3. Lightly coat Crockpot with nonstick spray.
  4. Layer beef mixture, tortillas, cheese, and enchilada sauce — repeat until ingredients are used.
  5. Cover and cook on LOW for 4–5 hours.
  6. Garnish with cilantro before serving.

Notes

For a spicier dish, use hot enchilada sauce or add a pinch of cayenne pepper to the beef mixture.
