Method
- Brown ground beef with onions; drain excess fat.
- Stir in taco seasoning, beans, corn, and tomatoes.
- Lightly coat Crockpot with nonstick spray.
- Layer beef mixture, tortillas, cheese, and enchilada sauce — repeat until ingredients are used.
- Cover and cook on LOW for 4–5 hours.
- Garnish with cilantro before serving.
Notes
For a spicier dish, use hot enchilada sauce or add a pinch of cayenne pepper to the beef mixture.
