Ingredients
  

Dough
  • 1 cup creamy peanut butter (natural or regular)
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2-3 tablespoons milk (if needed) Add as needed for consistency
  • Extra granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Cream butter and peanut butter until smooth.
  3. Add sugars, beat until fluffy; then mix in egg and vanilla.
  4. Mix in dry ingredients; add milk if dough is too stiff.
  5. Shape into balls, roll in sugar, place on sheets, press with fork.
  6. Bake 10-12 minutes, cool on sheet 5 minutes, then transfer to wire rack.

Notes

For softer cookies, slightly underbake and let cool.
