Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes, peeled and cubed
  • 1/2 cup maple syrup
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Boil sweet potatoes until tender, then mash.
  3. Mix mashed sweet potatoes with maple syrup, milk, butter, vanilla, cinnamon, nutmeg, and salt.
  4. Transfer to a greased dish, top with marshmallows and pecans.
  5. Bake for 25-30 minutes until marshmallows are golden.
  6. Let cool slightly before serving.

Notes

For extra flavor, sprinkle with a pinch of cinnamon before baking.
