Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes peeled and cubed
  • 0.5 cup maple syrup
  • 0.5 cup brown sugar
  • 0.5 cup milk
  • 0.25 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup mini marshmallows optional
  • 0.5 cup chopped pecans optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Boil peeled sweet potatoes until tender, then mash.
  3. Mix mashed sweet potatoes with syrup, sugar, milk, butter, eggs, vanilla, salt, cinnamon, and nutmeg.
  4. Transfer to a greased baking dish, top with marshmallows and pecans if desired.
  5. Bake for 25-30 minutes until golden and heated through.

Notes

For extra flavor, toast the pecans before adding on top.
