Ingredients
  

Vegetables
  • 1 piece spaghetti squash
  • 1 pound lean ground beef
  • 1 piece onion
  • 2 cloves garlic
  • 1 can diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • 1 cup mozzarella cheese

Method
 

  1. Preheat oven to 400°F (204°C). Roast halved spaghetti squash for 35–40 minutes.
  2. Cool squash, then scrape flesh into strands. Brown ground beef with onion and garlic, then add tomatoes, tomato paste, marinara, and Italian seasoning. Simmer 5 minutes.
  3. Mix squash strands into the beef sauce. Transfer to a baking dish, top with mozzarella, and bake at 375°F (190°C) for 20 minutes until cheese melts.

Notes

You can substitute other cheeses or add vegetables for extra flavor and nutrition.
