Ingredients
  

Vegetables
  • 1 medium spaghetti squash
Meat
  • 1 pound ground turkey or beef
Sauces and Dairy
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
Garnish
  • optional Fresh basil for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Roast halved squash for 30-40 mins.
  2. Cook meat until browned, add marinara, simmer 5 mins.
  3. Scrape squash into a bowl, layer half in a greased dish.
  4. Spread half of meat sauce, dollop ricotta, sprinkle mozzarella. Repeat layers.
  5. Cover with foil, bake 25 mins, then uncover and bake 10-15 mins until bubbly. Cool and garnish.

Notes

Use fresh basil for best flavor and consider adding a side salad for a complete meal.
