  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, oil, sugar, eggs, and vanilla until smooth.
  3. Whisk together flour, baking soda, baking powder, spices, and salt.
  4. Combine wet and dry ingredients; fold in nuts if using.
  5. Pour batter into pan and bake 60-70 minutes; cool before serving.
