These Sticky Chicken Bowls are a delicious and easy weeknight meal. Tender chicken and broccoli are coated in a flavorful sticky sauce and served over rice.

Ingredients
  

Rice
  • 2 cups uncooked rice
Broccoli
  • 2 small heads broccoli, chopped
Chicken
  • 3 large chicken breasts
Chicken Seasoning
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
Sticky Sauce
  • 0.5 cup soy sauce
  • 0.5 cup honey
  • 0.25 cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with 2 tbsp water to make a slurry
Spicy Mayo
  • 0.5 cup mayo
  • 1 tbsp sriracha
  • 2-3 tbsp water until pourable
Topping
  • sesame seeds for topping

Method
 

  1. Cook rice according to package instructions.
  2. Chop broccoli into small florets.
  3. Slice chicken, season with salt, pepper, paprika, chili powder, onion powder, and oregano.
  4. Heat oil, add chicken, and cook until golden and fully cooked.
  5. Steam or sauté broccoli until tender.
  6. Whisk sticky sauce ingredients, pour into skillet with chicken, and simmer until thickened.
  7. Stir together spicy mayo using mayo, sriracha, and water.
  8. Assemble bowls with rice, chicken, broccoli, drizzle spicy mayo, and top with sesame seeds.

Notes

Adjust the amount of sriracha in the spicy mayo to your preferred level of heat.
