Ingredients
  

Pumpkin and Dairy
  • 1 can (15 oz) pumpkin puree
  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
Cake Topping
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans or walnuts (optional)
  • 1/2 cup unsalted butter, melted

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix pumpkin, milk, eggs, sugar, vanilla, and spices until smooth.
  3. Pour into a greased 9x13 inch dish, sprinkle cake mix on top (do not stir).
  4. Add nuts if desired, drizzle with melted butter, then bake 50-60 mins until golden.
  5. Cool slightly and serve warm, optionally with whipped cream or ice cream.
