  • 1 lb ground beef
  • 1 tbsp olive oil if needed
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 2 cups uncooked short pasta penne, shells, or rotini
  • 1 cup milk
  • 0.75 cup heavy cream
  • 1 –1½ cups shredded cheddar mozzarella, or Velveeta cubes
  • 2 tbsp grated Parmesan
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley chopped (optional)

Method
 

  1. Cook ground beef in a skillet until browned; drain grease.
  2. Add onion and cook until softened. Stir in garlic and cook briefly.
  3. Season with Italian seasoning, paprika, salt, and pepper.
  4. Pour in beef broth and bring to a boil. Stir in pasta.
  5. Simmer until pasta is tender and liquid is absorbed, stirring occasionally.
  6. Stir in milk and heavy cream; let bubble gently.
  7. Add cheeses gradually, stirring until melted and creamy.
  8. Adjust seasoning, garnish with parsley, and serve.

Notes

For a spicier dish, add a pinch of red pepper flakes along with the other seasonings.
