Ingredients
  

Strawberry Salsa
  • 1 pound fresh strawberries hulled and diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 tablespoon jalapeno seeded and minced (optional)
  • 1 tablespoon honey (optional)
  • 1 Pinch salt
Pie Crust Chips
  • 1 box refrigerated pie crusts (14.1 ounces)
  • 2 tablespoons butter melted
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon

Method
 

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Make the salsa: Combine strawberries, red onion, cilantro, lime juice, jalapeno (if using), honey (if using), and salt. Toss gently and let sit for 15 minutes.
  3. Make the chips: Unroll pie crusts and brush with melted butter.
  4. Combine sugar and cinnamon. Sprinkle over the buttered pie crusts.
  5. Cut the pie crusts into desired shapes.
  6. Place the chips on a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes, or until golden brown. Let cool completely.
  8. Serve the strawberry salsa with the pie crust chips.

Notes

For a spicier salsa, leave some seeds in the jalapeno.
