  • 3 ripe bananas ripe bananas mashed
  • 3 large eggs large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons olive oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash bananas and whisk in eggs, almond milk, oil, and vanilla.
  3. In another bowl, combine almond flour, baking soda, and salt.
  4. Mix dry ingredients into wet until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50 minutes.
  6. Allow to cool before slicing and serving.

Notes

Use ripe bananas for best flavor and sweetness.
