Method
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together dry ingredients: flour, sugar, baking soda, and salt.
- In another bowl, mash bananas and mix in eggs and oil until well combined.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in optional add-ins if desired.
- Divide batter evenly among muffin cups and bake for 20 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool before removing from tin. Enjoy on-the-go!

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
