Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 3 ripe bananas mashed bananas about 1.5 cups mashed
  • 0.5 cup vegetable oil
  • 2 large eggs eggs
Optional Add-ins
  • 0.5 cup chopped walnuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together dry ingredients: flour, sugar, baking soda, and salt.
  3. In another bowl, mash bananas and mix in eggs and oil until well combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Fold in optional add-ins if desired.
  5. Divide batter evenly among muffin cups and bake for 20 minutes or until a toothpick inserted comes out clean.
  6. Allow muffins to cool before removing from tin. Enjoy on-the-go!

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
