Ingredients
  

Pumpkin
  • 1 can (15 oz) pure pumpkin purée
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice or a mix of cinnamon, nutmeg, and ginger
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mix pumpkin, sugars, and oil; add eggs and whisk until smooth.
  3. Combine dry ingredients; gradually add to wet mixture, stirring gently. Fold in nuts if using.
  4. Pour batter into pan and smooth the top.
  5. Bake for 55-65 minutes until a toothpick comes out clean. Cool before slicing.

Notes

For extra flavor, add a teaspoon of vanilla extract to the wet ingredients.
