Ingredients
  

Surf & Turf
  • 1 lb Sirloin steak about 1 inch thick
  • 1 lb large shrimp peeled and deveined
  • 1 lb sea scallops
  • 1.5 lbs baby potatoes quartered
  • 4 tbsp butter divided
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 0.5 tsp smoked paprika
  • to taste Salt and pepper
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with 1 tbsp olive oil, thyme, rosemary, paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast potatoes for 25-30 minutes, flipping halfway through.
  4. Pat scallops and shrimp dry. Season with salt and pepper.
  5. Melt 2 tbsp butter in a skillet. Add garlic and cook for 1 minute. Add scallops and shrimp, cooking for 2-3 minutes per side. Remove seafood.
  6. Melt remaining 2 tbsp butter in the same skillet. Season steak with salt and pepper. Cook steak for 4-5 minutes per side for medium-rare.
  7. Remove steak and let rest for 5 minutes before slicing.
  8. Arrange potatoes, steak, scallops, and shrimp on a platter. Drizzle garlic butter over the steak and seafood. Garnish with parsley and serve.

Adjust cooking times based on your preferred doneness for the steak and seafood. Ensure seafood is cooked through and steak reaches desired internal temperature.
