Sweet Chili Chicken Rice Bowls with Chicken Thighs

Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken thighs cut into 1-inch pieces
Sauce
  • 1/4 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 clove garlic minced
  • 1/2 teaspoon ginger grated
Serving
  • Cooked rice for serving
  • sliced green onions Optional toppings
  • sesame seeds Optional toppings
  • sriracha Optional toppings

Method
 

  1. Whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
  2. Add chicken to the bowl and toss to coat. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
  3. Heat a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until cooked through and browned, about 8-10 minutes.
  4. Serve the chicken over cooked rice. Garnish with sliced green onions, sesame seeds, and sriracha, if desired.

Notes

For extra flavor, try adding a pinch of red pepper flakes to the marinade.
