- Whisk together sweet chili sauce, soy sauce, rice vinegar, sesame oil, garlic, and ginger.
- Add chicken to the bowl and toss to coat. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until cooked through and browned, about 8-10 minutes.
- Serve the chicken over cooked rice. Garnish with sliced green onions, sesame seeds, and sriracha, if desired.
Notes
For extra flavor, try adding a pinch of red pepper flakes to the marinade.
