Ingredients
  

Vegetables
  • 2 medium sweet potatoes peeled and diced
  • 1 can chickpeas drained and rinsed
  • 1 piece onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • for garnish fresh cilantro

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion until translucent, then add garlic and ginger, cooking for 1 minute.
  3. Stir in curry powder and cumin, then add sweet potatoes and coconut milk. Simmer for 20 minutes until tender.
  4. Season with salt and pepper, then serve garnished with cilantro.

Notes

For extra flavor, add a squeeze of lime or a dash of hot sauce.
