Ingredients
  

Sweet Potatoes
  • 5 pieces sweet potatoes, peeled and sliced
  • 0.5 cup packed brown sugar
  • 0.25 cup butter
  • 3 tablespoons orange juice
  • 1 pinch ground cinnamon
  • 1 package miniature marshmallows (10.5 oz)

Method
 

  1. Preheat oven to 350°F (175°C). Boil sweet potatoes until tender, then mash.
  2. Mix mashed sweet potatoes with brown sugar, butter, orange juice, and cinnamon.
  3. Spread mixture into a 9x13-inch baking dish and top with marshmallows.
  4. Bake for 25-30 minutes until marshmallows are golden and puffed.
  5. Serve warm and enjoy!

Notes

For a richer flavor, add a dash of vanilla extract to the sweet potato mixture.
