Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup mini marshmallows (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Peel, chop, and boil sweet potatoes until tender, about 15-20 minutes.
  2. Drain and mash sweet potatoes until smooth. Mix in sugar, milk, melted butter, vanilla, cinnamon, nutmeg, salt, and eggs.
  3. Pour mixture into a greased 9x13 inch baking dish. Top with mini marshmallows if desired.
  4. Bake for 25-30 minutes until heated through and marshmallows are golden brown. Let cool slightly before serving.
