- Preheat oven to 350°F (175°C). Peel, chop, and boil sweet potatoes until tender, about 15-20 minutes.
- Drain and mash sweet potatoes until smooth. Mix in sugar, milk, melted butter, vanilla, cinnamon, nutmeg, salt, and eggs.
- Pour mixture into a greased 9x13 inch baking dish. Top with mini marshmallows if desired.
- Bake for 25-30 minutes until heated through and marshmallows are golden brown. Let cool slightly before serving.
