  • 4 cups cooked and mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup granulated sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch dish.
  2. Mix sweet potatoes, sugar, milk, butter, eggs, vanilla, cinnamon, nutmeg, and salt until smooth.
  3. Pour into dish and spread evenly.
  4. Combine pecans, flour, oats, and sugar; sprinkle over casserole.
  5. Bake 30-35 minutes until golden. Cool slightly before serving.

Notes

For extra crunch, add more pecans or oats on top before baking.
