Ingredients
  

Vegetables
  • 1 large sweet potato, peeled + cubed
  • 1 tbsp tablespoon olive oil
  • 1 tsp teaspoon smoked paprika
  • salt & pepper to taste salt & pepper
  • ½ lb pound ground beef (or turkey/lentils)
  • 1 tbsp tablespoon taco seasoning (or homemade)
  • ½ cup cup pico de gallo
  • ¼ cup cup guacamole
  • 2 tbsp tablespoons sour cream (or dairy-free alt.)

Method
 

  1. Preheat oven to 425°F (220°C). Toss sweet potatoes with oil, paprika, salt, and pepper. Roast for 15 mins, flip, then roast another 10–15 mins until golden.
  2. Brown ground beef in a skillet over medium heat. Add taco seasoning and water; simmer 2–3 mins until thickened.
  3. Divide roasted sweet potatoes into bowls. Top with beef, pico de gallo, guacamole, and sour cream. Garnish as desired.

Notes

For extra flavor, add cilantro or lime wedges.
