  • 1 cup cooked and mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon olive oil (optional)

Method
 

  1. Mix sweet potatoes, flour, salt, and baking powder until a dough forms.
  2. Add water gradually and knead until smooth.
  3. Divide dough into small balls and flatten into disks.
  4. Cook tortillas on a hot skillet for 1-2 minutes per side until lightly browned.
  5. Remove and keep warm until serving.

Notes

Use a non-stick skillet for easier cooking and less oil.
