- Preheat oven to 400°F (200°C). Roast sweet potatoes for 45-60 minutes.
- Heat olive oil in a skillet, add butter beans, and season with garlic powder, paprika, salt, and pepper. Cook for 5-7 minutes until crispy.
- Let sweet potatoes cool slightly, then cut in half and fluff insides with a fork.
- Top each sweet potato half with crispy butter beans and garnish with parsley. Serve warm.
