  • 2 medium sweet potatoes
  • 1 can (15 oz) butter beans drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • for garnish fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C). Roast sweet potatoes for 45-60 minutes.
  2. Heat olive oil in a skillet, add butter beans, and season with garlic powder, paprika, salt, and pepper. Cook for 5-7 minutes until crispy.
  3. Let sweet potatoes cool slightly, then cut in half and fluff insides with a fork.
  4. Top each sweet potato half with crispy butter beans and garnish with parsley. Serve warm.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of honey before serving.
