Method
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- Mix pumpkin, eggs, sugars, oil, and vanilla until smooth. Combine with dry ingredients.
- Pour batter into pan and bake for 30-35 minutes until golden and a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a rack to cool completely.
- Prepare frosting: beat cream cheese and butter until fluffy, add powdered sugar, vanilla, and salt. Spread over cooled bread.
Notes
For extra flavor, add a pinch of cloves or allspice to the batter.
