Dry Ingredients
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
Wet Ingredients
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegetable oil (or melted butter)
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. Mix pumpkin, eggs, sugars, oil, and vanilla until smooth. Combine with dry ingredients.
  3. Pour batter into pan and bake for 30-35 minutes until golden and a toothpick comes out clean.
  4. Cool in pan for 10 minutes, then transfer to a rack to cool completely.
  5. Prepare frosting: beat cream cheese and butter until fluffy, add powdered sugar, vanilla, and salt. Spread over cooled bread.

Notes

For extra flavor, add a pinch of cloves or allspice to the batter.
