Taco fiesta bubble up casserole

Ingredients
  

Meat
  • 1 lb cooked extra lean ground beef
Dough
  • 1 package Pillsbury biscuits 7.5 oz package
Seasoning
  • 30 g Taco seasoning
Sauce
  • 1 1/3 cup salsa
Vegetables
  • 2 cup diced peppers (red, orange, yellow)
  • 1 cup diced onion (red onion)
Cheese
  • 1 cup reduced fat shredded cheese (3 cheese blend)
Garnish & Topping
  • Green onion chopped green onion
  • Fat free sour cream for topping (optional)

Method
 

  1. Cook the ground beef, add taco seasoning, and simmer for a few minutes.
  2. Preheat oven to 350°F (175°C). Spray a 9x13 dish and set aside.
  3. Mix beef with salsa. Cut peppers, onion, and biscuits into pieces.
  4. Layer half of biscuits, meat mixture, peppers, onions, and cheese. Repeat layers and top with green onion.
  5. Cover loosely with foil, bake for 35 minutes, remove foil, and bake 15 more minutes. Cool 5 minutes before serving. Top with optional sour cream.

Notes

For a spicier version, add hot sauce or jalapeños.
