Taco Lasagna (Grandma’s Pantry Casserole)

Ingredients
  

Meat
  • 2 lbs ground beef Lean works best to avoid excess grease
Seasoning
  • 2 pkts taco seasoning Or use homemade for less sodium
Sauce
  • 1 can black bean sauce Or drained black beans (15 oz)
Vegetables
  • 1 can creamed corn Adds sweetness and moisture
  • 1 can diced green chilies Adds smoky depth
Tortillas
  • 12 large flour tortillas Burrito size for full coverage
Cheese
  • 3 cups shredded cheddar Sharp is best for flavor
  • 2 cups shredded pepper jack Adds a little heat
Optional
  • 1 cup sour cream For serving – cools the spice
  • 1 cup ricotta cheese Optional – for a lasagna-style texture
  • 1 egg Only if using ricotta

Method
 

  1. Brown the Beef: Brown ground beef, drain fat.
  2. Season and Mix Filling: Stir in taco seasoning, water, black bean sauce, and creamed corn.
  3. Layer the Lasagna: Layer tortillas, beef mixture, optional ricotta, chilies, cheddar, and pepper jack. Repeat.
  4. Bake and Rest: Bake covered at 375°F for 30 minutes, then uncovered for 10-15 minutes. Let rest 10 minutes.
  5. Serve and Top: Slice and serve with sour cream.

Notes

Adjust the amount of taco seasoning and green chilies to your preferred spice level.
