Ingredients
  

Eggplant
  • 2 medium eggplants, sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • for brushing Olive oil
  • for garnish Fresh basil

Method
 

  1. Preheat oven to 375°F (190°C). Brush eggplant slices with olive oil, salt, and pepper, then roast for 20 minutes.
  2. Mix ricotta, oregano, garlic powder, salt, and pepper. Spread marinara in a baking dish, layer eggplant, ricotta, and cheeses, then repeat.
  3. Cover with foil and bake for 25 minutes, then remove foil and bake 15 more minutes until bubbly and golden.
  4. Let cool slightly, garnish with basil, and serve.

For a vegetarian option, ensure cheese is vegetarian-friendly.
