Method
- Preheat oven to 375°F (190°C). Brush eggplant slices with olive oil, salt, and pepper, then roast for 20 minutes.
- Mix ricotta, oregano, garlic powder, salt, and pepper. Spread marinara in a baking dish, layer eggplant, ricotta, and cheeses, then repeat.
- Cover with foil and bake for 25 minutes, then remove foil and bake 15 more minutes until bubbly and golden.
- Let cool slightly, garnish with basil, and serve.
