Ingredients
  

Vegetables and Dairy
  • 2 medium eggplants sliced
  • 1 cup heavy cream
  • 1/4 cup cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 jar (24 oz) marinara sauce sugar-free
  • 1 cup shredded mozzarella cheese

Method
 

  1. Preheat oven to 375°F (190°C). Steam or boil eggplant slices until tender, then set aside.
  2. Mix heavy cream, cream cheese, garlic, salt, pepper, and paprika until smooth. Stir in cheddar and Parmesan cheeses.
  3. Layer eggplant slices in a baking dish, top with cooked ground meat mixed with marinara sauce, then cheese mixture. Repeat layers and top with mozzarella.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.
  5. Let cool slightly, garnish with parsley if desired, then serve.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
