Method
- Preheat oven to 375°F (190°C). Steam or boil eggplant slices until tender, then set aside.
- Mix heavy cream, cream cheese, garlic, salt, pepper, and paprika until smooth. Stir in cheddar and Parmesan cheeses.
- Layer eggplant slices in a baking dish, top with cooked ground meat mixed with marinara sauce, then cheese mixture. Repeat layers and top with mozzarella.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.
- Let cool slightly, garnish with parsley if desired, then serve.
Notes
For extra flavor, sprinkle with fresh herbs before serving.
