  • 2 tablespoons tomato purée Concentrated tomato flavor that thickens the sauce
  • 400 ml passata Smooth tomato sauce; can substitute with crushed tomatoes for a chunkier texture.
  • 100 ml water Adjusts sauce consistency; use as needed.
  • 1 beef stock cube Crumbled. Enhances the meaty flavor; choose low-sodium if preferred.
  • 1 teaspoon paprika Adds mild heat and color; smoked paprika can provide a smoky flavor.
  • 2 tablespoons fajita seasoning A blend of spices; adjust quantity based on brand and heat preference.
  • 1 teaspoon hot sauce Optional. For added heat; adjust to taste or omit if sensitive to spice.
  • 1 teaspoon sugar Balances acidity from tomatoes; adjust based on personal preference.
  • 400 g black beans Drained and rinsed. Adds protein and texture; ensure they're well-drained to prevent excess liquid.
  • 100 g grated cheddar cheese Provides a creamy, melted topping; Monterey Jack or a Mexican cheese blend are good alternatives.

Method
 

  1. Heat oil, cook beef until browned.
  2. Add onion, peppers, garlic; sauté 5 minutes.
  3. Stir in tomato purée, passata, water, stock cube, paprika, fajita seasoning, hot sauce, sugar.
  4. Simmer for 15 minutes, stirring occasionally.
  5. Add black beans; cook 5 minutes.
  6. Sprinkle cheese, cover until melted.
  7. Garnish and serve hot.

Notes

For a spicier dish, add more hot sauce or use a spicier fajita seasoning.
