Bread
  • 4 cups stale bread, cubed
  • 1 cup vegetable broth
  • 0.5 cup onion, finely chopped
  • 0.5 cup celery, finely chopped
  • 0.5 cup dried cranberries
  • 0.5 cup walnuts, chopped
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped
  • 2 large eggs, beaten

Method
 

  1. Preheat oven to 375°F (190°C). Sauté onion and celery until softened.
  2. Combine bread, vegetables, cranberries, walnuts, herbs, salt, pepper, and parsley in a bowl.
  3. Pour broth over mixture, add eggs, and mix until combined.
  4. Form into small balls and place on a lined baking sheet.
  5. Bake for 20-25 minutes until golden and crispy. Cool slightly before serving.

Use day-old bread for best texture and flavor.
