Method
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the dry ingredients: flour, sugar, and baking soda.
- In another bowl, mash bananas and whisk in eggs and oil.
- Combine wet and dry ingredients until just mixed, then fold in chocolate chips.
- Spoon batter into muffin cups and bake for 20 minutes or until golden brown.
Notes
For extra moist muffins, do not overmix the batter.
