  • 1 whole turkey (12-14 lbs)
  • 1 cup unsalted butter, melted
  • 2 tablespoons cajun seasoning
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for extra heat)
  • 1 each lemon, halved
  • 1 each onion, quartered
  • 4 cloves garlic, smashed
  • to taste fresh herbs (rosemary, thyme, parsley) for stuffing
  • as needed cooking spray or oil for greasing

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix melted butter with Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne.
  3. Pat turkey dry, rub with Cajun butter mixture, including under the skin.
  4. Stuff cavity with lemon halves, onion, garlic, and herbs. Roast on a rack, basting every 30 mins. Remove foil last 30-45 mins for crisp skin.
  5. Cook until internal temperature reaches 165°F (75°C), about 3-4 hours. Rest before carving.
