Ingredients
  

Pumpkin
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/3 cup water
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional) optional
  • 1/2 cup chocolate chips (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, sugars, oil, eggs, and water until combined.
  3. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Combine dry and wet ingredients; fold in nuts and chocolate chips if using.
  5. Pour batter into pan and bake 60-70 minutes until a toothpick comes out clean.
  6. Cool in pan 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a teaspoon of vanilla extract or sprinkle with powdered sugar before serving.
