Ingredients
  

Pasta
  • 8 oz penne pasta
Sauce and Cheese
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Vegetables
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup sliced zucchini
Seasonings and Oils
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper Salt and pepper
Oils
  • for drizzling Olive oil

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  2. Mix marinara, ricotta, garlic, oregano, basil, salt, and pepper. Add cooked pasta and vegetables, then combine.
  3. Transfer to a greased baking dish, top with cheeses, drizzle with olive oil.
  4. Bake covered for 25 minutes, then uncover and bake 15 more minutes until bubbly and golden.
  5. Let cool briefly, then serve and enjoy!

Notes

You can add extra vegetables or cheese for more flavor.
