The Juiciest Mexican Shredded Chicken

Ingredients
  

Protein
  • 4 pieces chicken breasts or thighs about 800 grams
  • 3-4 pieces onions cut in lengthwise strips
  • 1 bulb garlic bulb cloves finely diced
  • 1 tin tomato paste 70 grams
  • 1 piece lime juice
  • 1 can diced tomatoes or whole, 400 grams
  • 200 ml chicken broth or 1 stock cube + water
  • 4 tbsp extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 tsp paprika
  • 1 tsp smoked paprika hot or sweet
  • 1 tsp ground allspice
  • 0.5 tsp chilli flakes

Method
 

  1. Mix all spice ingredients in a bowl. Coat chicken with spice blend.
  2. Sear chicken in hot pan with 2 tbsp olive oil until golden. Remove and set aside.
  3. Sauté onions until translucent, then add garlic and cook 1 minute.
  4. Add tomato paste, cook 2 minutes, then add tomatoes, chicken broth, and lime juice. Return chicken to pan, simmer 30 minutes.
  5. Shred chicken, simmer uncovered 10-15 minutes to reduce sauce. Adjust seasoning before serving.

Notes

For extra flavor, add fresh cilantro or serve with warm tortillas.
