Method
- Mix all spice ingredients in a bowl. Coat chicken with spice blend.
- Sear chicken in hot pan with 2 tbsp olive oil until golden. Remove and set aside.
- Sauté onions until translucent, then add garlic and cook 1 minute.
- Add tomato paste, cook 2 minutes, then add tomatoes, chicken broth, and lime juice. Return chicken to pan, simmer 30 minutes.
- Shred chicken, simmer uncovered 10-15 minutes to reduce sauce. Adjust seasoning before serving.
Notes
For extra flavor, add fresh cilantro or serve with warm tortillas.
