  • 2 cups vegetable broth

  • 1 can black beans, rinsed and drained

  • 1 cup corn, fresh or frozen
  • 1 red bell pepper diced red bell pepper

  • 1 avocado diced avocado
  • 1 lime juiced lime
Spices & Seasonings

Method
 

  1. Rinse the quinoa under cold water.
  2. Combine quinoa and vegetable broth, bring to a boil, then simmer for 15 minutes.

  4. Add lime juice, cumin, salt, and pepper; stir well.
