Ingredients
  

Sweet Potatoes
  • 2 large sweet potatoes boiled or baked until tender
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs, separated
  • 1/4 cup milk
  • 1/2 teaspoon cream of tartar

Method
 

  1. Preheat oven to 375°F (190°C) and grease a soufflé dish.
  2. Mix mashed sweet potatoes with melted butter, sugar, vanilla, cinnamon, nutmeg, and salt.
  3. Add egg yolks and milk, stirring until smooth.
  4. Beat egg whites with cream of tartar until stiff peaks form, then fold into the mixture.
  5. Pour into dish and bake for 25-30 minutes until puffed and golden.

Notes

Serve immediately for best airy texture.
