  • 2 cups cooked and mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 3 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Method
 

  1. Preheat oven to 350°F (175°C) and grease a soufflé dish.
  2. Mix sweet potatoes, sugar, butter, milk, vanilla, spices, salt, and baking powder until smooth.
  3. Beat egg whites until stiff peaks form.
  4. Fold egg yolks into the mixture, then gently fold in egg whites.
  5. Pour into dish and bake for 30-35 minutes until puffed and golden.
  6. Serve immediately for best texture.
