  • 1 medium sweet potato peeled and cubed
  • 1 small apple peeled, cored, and grated
  • 1/4 cup rolled oats or oat flour
  • 1 tablespoon olive oil
  • 1/4 teaspoon cinnamon optional

Method
 

  1. Steam or boil sweet potato until soft (10-15 minutes).
  2. Mash the cooked sweet potato in a bowl.
  3. Add apple, oats, olive oil, and cinnamon (if using) to the sweet potato.
  4. Mix well until combined.
  5. Form into small patties (2-3 inches).
  6. Heat oiled skillet over medium heat.
  7. Cook patties 3-4 minutes per side, until golden brown.
  8. Let cool slightly before serving.

Notes

Adjust the amount of oats to achieve the desired consistency for the patties.
