Ingredients
  

Vegetables
  • 1 medium spaghetti squash
  • 1 pound ground turkey beef sausage
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh basil

Method
 

  1. Preheat oven to 400°F (200°C). Cut squash in half and roast for 30-40 mins.
  2. Cook sausage until browned, then add marinara and simmer for 5 mins.
  3. Scoop out squash strands and mix with ricotta, Italian seasoning, salt, and pepper.
  4. Combine squash mixture with sausage and marinara, then transfer to a baking dish.
  5. Top with mozzarella and Parmesan, then bake for 20-25 mins until bubbly and golden.
  6. Garnish with basil before serving.

Notes

For a vegetarian version, substitute sausage with sautéed vegetables.
